Ingredients:

  • 12 oz spaghetti or your choice of pasta
  • 1 lb cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 3 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • Optional: red pepper flakes for a spicy kick

Instructions:

  1. Cook Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
  2. Sauté Garlic and Mushrooms: In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant. Increase heat to medium-high, add mushrooms, and cook until they are golden and have released their juices, about 8 minutes.
  3. Add Spinach and Cream: Reduce heat to low. Add spinach to the skillet and cook until it wilts. Stir in heavy cream and Parmesan cheese, and gently simmer until the sauce thickens slightly, about 3 minutes. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet. Toss well to coat with the sauce. Season with salt and pepper, and sprinkle red pepper flakes if using.
  5. Serve: Serve hot, garnished with more grated Parmesan and a drizzle of olive oil if desired.

Storage: This dish is best enjoyed fresh but can be stored in the refrigerator for up to 2 days.
